Traditional Latkes

I want to take a moment to wish everyone a Happy Hanukkah and a beautiful 8 days of light and blessings.

This is my go to recipe for latkes from Susan Fischer Weis’s “The Complete Guide to Hanukkah” (substituting Matzoh Meal for Breadcrumbs) and they always warm our hearts and stomachs.

*You can use a food processor for the potatoes and onions if it makes it easier for you.
